Whole-Wheat Bread

7 cups whole-wheat flour
1/2 cup olive oil
1/2 cup honey
2 teaspoons sea salt
1Tablespoon instant yeast
2 1/2 cups hot water


Put 2 cups of the flour in mixer, adding the oil, honey, and salt.

Make a well in the flour and pour in yeast, then heat the water and pour in all at once.

Turn mixer on speed 2 with dough hook and mix until combined.  Add 4 cups of the flour and mix until combined.
Dust clean countertop with flour adding the remaining flour to the dough.

When combined, empty dough onto dusted countertop and knead 2-3 strokes.  Divide in half.

Shape into loaves and place in two greased pans making slashes across the top.  (To retain pretty slashes, dust the top of your dough with flour.)

30 min.
Place in warm oven and let rise from 30 min. to 1 hour.  Bake at 350° F for 30 minutes.
